My latest, a ten inch chef's knife, made with the assistance of the Jones Brothers. More work went into this knife than any other I've worked on, including, handmade stainless bolsters with stainless pins, and hand rubbed finish on the 1080 carbon steel blade. Also, the handle was hand sanded and rubbed with paste wax and alumina oxide prior to buffing. Like the Japanese knife profile this one was taken from, the weight is forward of the bolsters.
